The Saintes' signature cake - a shortcrust tart filled with coconut jam and topped with sponge, traditionally baked by sailors' wives - sold warm by local women to every ferry arriving at the pier.

Position approx: the ferry landing / Place du Gouverneur Lion where the sellers stand (OSM terminal node). Buy early - they sell out in the morning (tourism board). Banana, guava, mango and pineapple versions exist (French Wikipedia). A best-and-biggest tourment competition is held at the 15 August patronal feast.
